Renowned chef Marco Laurent has launched a fully plant-based tasting menu at his flagship London restaurant, Le Gourmet Vert, aiming to redefine fine dining with sustainable ingredients. The 12-course menu includes dishes like truffle-infused mushroom ravioli, smoked carrot tartare, and almond-based crème brûlée. Chef Laurent stated:
“We wanted to show that plant-based cuisine can be as indulgent and creative as traditional fine dining, without compromising on taste or sustainability.”
The restaurant will run this menu as a limited seasonal offering through December 2025.
